TERROIR / SOIL
Weathered Shale soils with a high iron content and Table Mountain Sandstone which is rich in minerals.

VINEYARD AND CLIMATE CONDITIONS
Planted in 2009, these 12-year-old trellised vines yield an average of 8 tons per hectare. Elgin Valley is a cool climate wine region with the South Atlantic Ocean just 15km away. The vineyard is located 300m above sea level with North-South face slopes. The cool southerly winds contribute to the cool climate that characterizes its terroir. The average annual rainfall is 1011mm with 366mm falling in summer.

WINEMAKING
Only Pinot Noir grapes from one selected block were used, and harvested between 18.5 – 19.5 oB. The grapes were whole bunch pressed after sorting by hand. The juice was fermented in a stainless-steel tank with a small percentage fermenting in old French oak barrels. Secondary fermentation took place in the bottle with extended aging on the lees for 14 months prior to disgorging.
