VINEYARD AND CLIMATE CONDITIONS
Dryland, trellised vines with an average age of 15 years yielded the grapes for this wine. Moderate summers with low night temperatures and cold winters create a perfect micro-climate for Sauvignon Blanc grapes.

WINEMAKING
Grapes were harvested with a new technology harvest machine early in the morning while the ambient temperatures are still very low and the grapes cool. We harvested at optimum ripeness (between 21° and 23° Balling). Skin contact was allowed for 4 hours at 10°C. Only free-run juice drained by gravity was used for fermentation. The wine fermented in stainless-steel tanks between 12° and 14°C. After fermentation, the wine matured on its lees for 3 months before racking and bottling.
