WINEMAKING

WINEMAKER:

ORIGIN

Western Cape

VINEYARD AND CLIMATE CONDITIONS

13-to-19-year-old trellised vines planted on rolling hills of predominantly decomposed granite and weathered sandstone. The vines received supplementary irrigation and produced 10 tonnes per hectare. The Western Cape has a Mediterranean climate with warm to hot summers and cold wet winters.

WINEMAKING

Grapes were harvested at optimal ripeness, gently crushed, de-stemmed and cooled. After two days of cold soaking, the juice was fermented until dry in stainless-steel tanks. Thereafter, 60% of the wine matured in stainless-steel tanks with French-oak staves for 12 months before blending, and the balance matured in neutral French-oak barrels.
