SPECIFICATIONS WINEMAKER Anthony Kock ORIGIN Coastal Region TERROIR / SOIL Selected vineyard sites in Stellenbosch and Cape Town VINEYARD AND CLIMATE CONDITIONS Trellised vines planted North-West and only 10km from the ocean. The cooling effect of the sea breezes in summer on the vineyards takes the edge off the heat, giving the berries a longer ripening period. WINEMAKING These grapes were machine harvested and processed before sunrise to preserve the grape characteristics. Skin contact was limited to four hours and the free run juice drained off to settle overnight before inoculation with a special yeast strain. Fermentation took place in a stainless-steel tank at 14°C. The wine matured for eleven months on the lees in the tank.
