WINEMAKER: Jacques Erasmus

ORIGIN:
Cape Agulhas appellation in the Cape South Coast.

TERROIR / SOIL:
The farms geological formations are unique. The vineyards are planted in sandy, gravelly and highly weathered soils with a clay substructure. The vineyard has a view over the famous Walker Bay.

VINEYARD AND CLIMATE CONDITIONS:
Trellised vines planted North-West and only 10km from the ocean. The cooling effect of the sea breezes in summer on the vineyards takes the edge off the heat, giving the berries a longer ripening period.

WINEMAKING:
Only the most perfect bunches were hand-harvested early in the morning. At the cellar the grapes were carefully destemmed and gently crushed. Skin contact was allowed till the juice had the perfect salmon pink color. Only the free run juice drained off to settle overnight before inoculation with a selected yeast strain. The fermentation took place under controlled temperatures between 12° – 14 °C.

pH: 3.33

APPEARANCE:
Pale salmon pink.

TASTING NOTE:
Complex red berries, strawberries, rose petals with a mineral undertone. The palate offers great freshness and acidity.

SERVE WITH:
Serve any time of the day, especially with seafood dishes and lightly-dressed garden salads.
