Coastal (Durbanville and Stellenbosch)

TERROIR / SOIL:
Soils: Clovelly, Oakleaf and Swartland
Slopes: Southwest facing in the cool, coastal areas of Tygerberg and Helderberg.
Proximity to ocean: 9 – 14 km
Annual Rainfall: 750 mm

VINEYARD AND CLIMATE CONDITIONS:
Four different blocks of vineyards planted on an altitude between 204 and 295 meters, with close proximity to the ocean. This makes for vineyards that are perfect for producing high-quality Sauvignon Blanc and Sémillon wines. All the blocks are dryland vineyards and have a natural low production. A combination of these conditions create concentrated grapes with intense flavors.

WINEMAKING:
Grapes were hand-harvested early in the morning in 10kg lug boxes and pre-cooled before hand-sorting, destemming and crushing. Skin contact was limited to six hours and the free-run juice drained off to settle overnight before inoculation with a selected yeast strain. The fermentation took place under controlled temperatures between 12° and 14 °C. The wine matured for six months on the lees before bottling.

TA: 6.8 g/L

RS: 4.0 g/L

pH: 3.32

APPEARANCE:
Pale straw in colour with hints of lime on the edge.

TASTING NOTE:
Gooseberries, limes and white peaches reveal its tropical character, while underlying notes of fynbos and a touch of white asparagus deliver serious depth. The palate is young and tropical, leading to a long, mineral tail that is tight and structured.

SERVE WITH:

Butter roasted free range chicken with seasoned goat’s cheese under the skin, or battered SASSI-friendly fish nuggets with anchovy mayonnaise.
